Bishul 'Acu"m

Question

In your Halakha` section, bishul `acu"m is defined as food that cannot be eaten raw. Isn't it also necessary for it to be served at a king's meal? For instance, given that chestnuts are not eaten raw, that roasted chestnuts are considered poor people's food but marrons glaces (candied chestnuts) are a delight and rather expensive, does that render them forbidden?... In Europe, in winter, there are people selling roasted chestnuts on the street - they roast them right there in the street, not at home, on a pierced metal plate where only chestnuts are cooked right on the flame. Is that OK?... Why?... Why isn't there a problem with chocolate, since the fruit of the cacao plant is NOT eaten raw?... Could you review ALL the necessary conditions?...
