Bishul Akum

I saw your reply to Joseph that anyting carried in a supermarket does not have a problem of bishul akum but you didn't explain what is the defintion of bishul akum. Inother words, why is it assur to buy something cooked in a restaurant but if this restaurant packages it and sells it at the supermarket down the street, then it is permissible?
