Cheesy questions

After I saw the response today to that question (Jake's "Cheese" question) on when a Torah observant Jew must directly supervise the chessemaking process, I have a couple questions on cheese: a. I thought in order for cheese to be Gevinas Yisroel, an observant Jew had to watch the entire cheesemaking process for all cheeses. Now that you mentioned to Jake that all that's needed is for an observant Jew to watch the company putting in the rennet into the cheese, I'm wondering how rennet is used in soft cheeses? Not that it changes anything since gevinas yisroel applies to all cheeses regardless, but I never thought that soft cheeses used rennet, just hard cheeses. b. For cheese products with an OU-D that are derived from hard cheeses BUT that cheese is converted into a powder-like form on the snacks (e.g. the various cracker sandwiches from Austin's, UTZ cheese puffs, and the other cheese snacks with an OU-D hashgacha), would those cheese snacks qualify as gevinas yisroel?
