Chumrot/ Halacha

Question

I am simply amazed to see all the new Chumrot coming out almost weekly. It is even more surprising that now they are called "Halacha”- despite the fact that no one even thought of them in the previous generation people would have called such a person a lunatic. Let’s see what I came across recently: 1. I invited a religious family for a mean and they refused to eat non-katif veggies. I went into details how we cleaned, soaked, lemoned and searched: but they said that now it is a Halacha and the fact is No hashgacha is ever given for non-katif veggies at restaurants (in Israel at least) 2. Issur to drink Tap water (bugs..) really ranks up there. What did people do for 3000 years. Torah was given to mankind and not to microscopes. BTW: even bottled “mineral” water has very tiny bugs, which can be seen only with a microscope. 3. I also think the newly built “Chametz Verification Institute” is a unique way to make some quick money. This a kennel with about 7 breeds of dogs that are fed “suspicious” and potential chametz items to see if it is “fit to be eaten by a dog”. I heard they charge about NIS 150 per test ! 4. Now I heard about the hair wigs as Avoda Zara…. I just had to write this and wanted a short comment from you. Are these “Chumrot” or actual Halacha Gufah?
