Comment and 2 short questions

Question

To the couple of people who were wondering which post talked about a number of students in R' Aharon Kotler's day refusing to eat challah from Gelbstein's and how he didn't allow special "cholov yisroel" milk in the yeshiva, that is found in the reply to Estie's "trust2". Now for a couple short questions: 1. Is a man required to say the verses starting with "Boruch Hashem L'olam..." for weekday Maariv no matter what or is this a requirement only for those men who can concentrate on it properly? 2. Would Ho'adomoh be the correct bracha for all vegetable juices?
