If I get the fiying pan really hot by turning up the flame, does this kasher it?

Yes. If you heat it up for a few minutes, until whatever might have been absorbed is burnt to a crisp, it's now Kashered. That is called Libun, and the common 24-hour-wait does not apply. AA
