Gelatin

Question

When you say that during the processing gelatin is made not rauy le-akhilah, what does this mean? After all, we are eating the gelatin. Incidentally, what is the purpose of gelatin, (which is found in a number of products such as marshmellows and yogurt)? If it doesn't add to the taste, what does it do?
