GELATIN, REVISITED

Question

Dear Rabbi, I have learned from you on this website that gelatin is kosher, and I now enjoy many foods that I would otherwise not have, had I stayed ignorant of the actual halacha. I have done a search on this on your website -- So I apologize for rehashing this topic, but one claim against the kashrut of gelatin still remains unclear to me: 1. Why does the concept of achshevey not apply to gelatin? Where can I further research this? Also, you once mentioned that Rav Moshe has a teshuva that ingredients listed on company letterhead can be trusted. Where in Igrot Moshe is that found? Thank you.
