Glatt Kosher- Fact or fiction?

Question

I don't understand the whole concept of Galtt. A food item is either kosher or not kosher, is it possible for something to be more kosher than kosher? I don't understand. Is the concept of glatt a farce much like chalav yisroel? Please explain. thank You!
