Hashgacha

Question

Why does a meat or dairy restaurant need a hashgacha? If we trust someone to tell us that his restaurant is vegetarian, why don't we trust someone to tell us that the cheese or meat he uses is kosher?

A vegetarian restaurant will close down if there is a bit of meat, fish, or cheese in there. If they say it's Kosher and it isn't, it isn't the biggest deal. They aren't too scared. AA
