Question

During Pesah I asked: If you confirm that the ingredients in a home- made ice cream store are kosher, do you still need a hekhsher? If so, why (if not, why not)?Does it matter if the owner is Jewish and keeps the store open on Shabbat?

The question is based on too many assumptions. What is a "hechsher?" Where in Halachah does it say that you need a hechsher? What did they do before the 1960's all the way back to Moshe Rabeinu, when there was no such concept as a hechsher?
