Dear Aaron / CYA: As usual you are 100% on the mark! Every hot water heater has markings on the dial. Mine is a Bradford -White and if you go on their website you can view their manual. Firstly, all hot water heaters come with a warning to the installer not to set above 125 degrees as it can cause burns. There is a marking on the dial for " approx. 120 degrees." (A.O.Smith has even better markings; from 80 to 160 degrees) Although I personally keep mine hotter, I just lower it past the 120 degree mark well before shabbos and in the morning it is no longer hot - just warm. Although , the temperatures are probably not exact (as per Max) and even when set at 120 it can possibly surge above that mark; what I understood from following your replies is that at that point it is no longer a Psik Raisha because it may or may not have gone above the dgerees that you set.
