Question

If you confirm with a local ice cream store that their ingredients are kosher, you can eat there (you are, in effect, the mashgiah). But unless there is a continuing surveillance, with is what hashgacha provides, how can you be sure that they don't change the ingredients without you knowing. Thanks..
