kosher cheese

Question

Dear Rabbi, If kosher cheese is (or was) made by putting milk in the stomach of a kosher animal how can this be kosher? milk and meat and if you say that it isnt bishul, and not assur, it still should be forbiddeen lekatchillah, no? since we never permit eating meat and milk together??? voos veys ich? i would appreciate your explanining this
