Majority of poskim?

Question

Fine, so we know that according to the books gelatin is OK. But now we are facing another problem. If the majority of the rabbis get together and say that it is no kosher, then don't we have to go by them? From what I understand, if the majority of the rabbis decide that apples are no longer kosher, then we have to go by their psak din. Don't we?
