Question

Thank you for answering the question about the milking process. Who is watching the cheese "freeze"? What constitutes watching? Does the Chalav Yisrael cheese we buy actually meet the Rabbinical requirements for Gevinat Yisrael? I realize that we have to eat something, but I have noticed that the old cookbooks from my mother's day have entire sections for making "syrian cheese" with milk and lemon juice (never tried it though) or yogurt and a cheese cloth (that we did). I sincerely hope that all of the Chalav Yisrael dairies ARE actually supervising the cheesing process in accordance with the halacha.
