natural flavors

Question

I heard from one of the heads of the ou kashrut deparpment that one of the reasons that just checking ingriedients is not good is because of natural flavors. He said that one time it happened that a company wrote natural flavors and one of those flavors was crushed up beatles, which is not kosher. Could you please explain why you are not concerned aboput something like that happening? Thank you.
