Non Kosher Cheese

Question

I hear that non kosher cheese is not made how it used to (aged inside a cows stomach) but now it is made by machine. I admit to "eating out" but always being careful not to have any meat or cheese products only Pareve. What is your opinion on eating cheese in a non kosher establishment?
