Owning a Restaurant

Question

If a person owns a coffee shop, does all the coffee/food served have to be kosher? If the coffee/food is kosher, does it have to be certified by a mashgiach? Also, does such a place have to be closed on the Sabbath and Jewish holidays? If a person needs a partner to make the place open on such days, how is such an arrangement worked out?

It must be Kosher, but no need for a Masgiach. If the partner keeps the proceeds of Shabbat & pays a fixed amount for the costs of the food & utilities, rent etc.. it's OK. AA
