Rabbi Tibor Stern, who is the supervising Rabbi for Hebrew National is considered by many Rabbis to be one of the foremost living authorities on shehita in the world. My husband has been privileged to hear more than a few nationally recognized kashrut authorities publically defer to Rabbi Stern's tremendous breadth of knowlege about shehita on several occasions. Aside from being a world reknown talmid chacham, Rabbi Stern is certainly a man whose yirat shamayim is beyond question.
