rice and canola oil

Question

I have always been under the impression that all plain rices are OK for Pesah. It seems to me that if there were any wheat involved in rice production, that would negatively affect people who are allergic to wheat or have celiac disease. Therefore, a company would have to be crazy to risk a lawsuit based upon a reaction from wheat in its rice. Is my thinking correct? Also, is canola oil a vegetable oil, and therefore OK for Pesah? (What's a canola?) Thank you.
