Question

if you get a salad with different toppings - croutons, tomatoes, pasta, cheese and fish - must you make separate blessing or just one? even if they are easily distinguished?

If it's eaten together, as it sounds like, there could only be one blessing. A second or third blessing would each be a Berachah Levatalah, blessing in vain. AA
