Soft Matzah

Question

I am facinated by the question about soft matzah. I always wondered why the flat pita bread could not be considered as the bread that didn't rise. The only difference is that it is leavened. Where can I get this soft matzah in New York? or can it be home made? I usually make the matzah meal and egg type "rolls", and I always like to try new things.
