Truffle

Truffles are tubers (ie vegetables like potatoes) that grow in the ground on the roots of oak trees. They are found in France, Italy, Morocco and recently in Oregon. They are usually sold either packed in water, in olive oil, frozen or dried. They are also used to infuse olive oil with flavour. They are very very expensive and very much prized for the wonderful flavour that they impart to meats and sauces. Susan's truffle (which may have cost as much as $2,000 per pound) is enough to flavor an entire meal. (It is an expensive gift!) To use the truffle you slice it razor thin and add it to lamb, chicken, even pasta sauce or on top of poached eggs. Spanish Moroccan Jews (of which I am one) look forward to a first seder meal of lamb and truffles for the entire year. Truffles are really expensive, and if you use it, you might be better off if you find you do NOT have a taste for them.
