Coffee on Shabbat

Question

I know that you can use a timer on your cofee machine. But can you place the coffee in the coffeemaker once Shabbat has already started? How about in an oven which is also on a timer? In general, if you leave the oven on, why can't you put food in to reheat on Shabbat morning?

If the oven, coffee maker, crockpot is off now, you can put food into it, even though soon it will turn on and cook it. AA
