Halav Yisrael

Question

I just had the typical, but frustrating, experience of having someone's Rabbi tell them to reject a Shabbat invitation to our house because we hold by your rulings on Kashrut. I believe the two items of particular worry to them were gelatin and dairy. The getalin thing is literally cut-and-dry, pun intended, but I do have a question regarding Halav Yisrael dairy. The question is: How "supervised" and "watched" is the Halav Yisrael milk in most cases? 1. Are there truly legions of Mashgichim supervising the factory milking of all the cows ?followed by 2. Are the milk trucks properly sealed and certified so that there would be no doubt when the milk arrives at its next destination that it is in fact the same milk? followed by 3. Are there truly Mashgichim on site full time while the milk is being packaged and processed into whatever it becomes? or 4. Are they simply following the principle of "watched without watching" like every other meaningless Hashgacha? I began to wonder this about Halav Yisrael dairy when I learned that the difference between a Kitov Oatmeal cookie and a Matthews Oatmeal Cookie (which is the package that the Kitov sticker is adhered to) is the fact that an observant Jew has flipped the switch to start the automated production line. It has made me wonder what REALLY makes it "Halav Yisrael." Please forgive me if this message sounds more like ranting than asking, but I really want to know whatever it is that you know about that industry! Thank you again!
