Question

So now I understand why you can eat in a local ice cream store if you confirm that the ingredients are kosher. But where is one to draw the line? If a non-religious person opens a local meat restaurant and tells you that everything is kosher, is he to be believed? In general, are non-Shomer Shabbat people to be trusted with regard to kashrut?
