Kashrut in England

Question

Regarding a recent posting about the kashrut situation in England, I asked a local rabbi and he said that since there aren't many frum Jews in England that are forced to rely on a list put out by the Beis Din, but we in the U. S. are able to operate at a much higher level of confidence in kashrut matters because of our hashgachot, and that is someting that all religious people should strive for. Ma'alin beKodesh (as he put it) How does one respond to this?

Our religion is based on an old doctrine, specifically the Torah. Where can I find this in that doctrine? AA
