Kashrut Mafia?

K'vod HaRav: A meat establishment in our area which many refused to frequent becuase of what they called an "inadequate Sefardi" hashgacha (little do the members of the community know that they stole many of their kashrut humrot from the Beit Yosef!), has recently decided to "upgrade" their kashrut by getting supervision from one of the major kashrut companies. My initial reaction, being an avid reader of your site, was "Chalk up one more victory for the Institutional Kashrut Mafia." I received the following response from a family member: "Negative. Chalk up one for a consistent standard of kashrut. To associate every communal effort with organized crime is analogous to Mel Gibson's depiction of the Sanhedrin as the something akin to the Cosa Nostra. Cut out the crabbng (no pun intended). There's more to kashrut than a paper teuda." How would you respond?
