kosher cheese

Dear rabbi, You always explain things clearly. taking off on your last statement on cheese manufacture, in olden days hard cheese was made by putting milk in the stomach of a kosher animal, or so i have read. How could they put milk and meat together and get kosher cheese? what is the halachic concept din etc that would permit this lekatchillah thank you again for returning common sense to psak
