Question

When I was a kid we used to wait 3 hours simply because my family was not religious then. Their families each waited 6 hours. When they put me into yeshiva day school I learned we were supposed to wait 6 hours so my family conformed to what I said was proper. Since then we have waited 6 hours. My father is Buchari (family from Tashkent) and my mother's family is part Polish and part Russian. Sooooo, can I switch to 5 hours and 1 minute if that is an acceptable sephardic minhag?
