more on tortilla ?

Question

i just saw that a flour tortilla is mezanot?? fyi we are sephardi i learned that if baked flour food is hard and crunchy it is mezanot and if it is soft it is hamotzie if i make a bread dough out of yeast, flour water and make it really thin and cook in on top of a frying pan in a drop of oil what bracha will it be ? hamotzie? how does tortilla differ? thank you for clarifying this..
