OU potatoes

I did contact the OU regarding their standards for certifying that raw potatoes are indeed kosher according to OU standards. Here is the final response that I received from the OU when I inquired: Thank you for checking with the OU on your Kashruth question. Please be informed that produce grown on trees or from the ground is kosher. Problems arise when a vegetable or fruit are processed or undergo changes through technology and only then, do they need certification. Another problem, of course, is infestation which must be carefully inspected. Those potatoes and carrots which are OU endorsed are free of the above concerns. End of OU response. I hope that this will help to clarify any of your questions regarding the OU's supervision of potato bagging facilities.
