OVEN- MILK AFTER MEAT

Question

Hi , Im very confused regarding puting milk in the oven right after meat. The assumed alacha has been to wait the 24 hours. why is there no problem of the steam? why does everyone wait that long and alot of poskim say you should do that ?? is that just a HUGEEE chumra? Please Clarify im asking in behalf of alot of people
