Soft Cheese

Question

So, what are we looking for in Gevinat Yisrael? Exactly what is it? If it is not acceptable to eat soft cheese,i.e., cream cheese, cottage cheese, without it being gevinat yisrael how do all the hechsherim not provide it? And should I rid myself of the soft cheese in my fridge or just not buy it anymore? In other words, is it preferred or are we really in trouble?
