Stam Keilim 2

Question

Dear Rabbi CYA, Pursuant to my earlier question about stam keilim: Please correct me where I am wrong! I remember learning that there is a difference between treif "ben yomo" and basar or chalav "ben yomo". When it comes to basar or chalav, if I cook milk in a pot at 8 PM and then, let's say 12 hours later at 8AM, cook water in a pot, I can ignore the cooking of water - I count its ben yomo status from the original cooking of milk. This would mean that its status changes to "Aino Ben Yomo" at 8PM no matter what. On the other hand, when it comes to treif food cooked at 8pm, if I cook water at 8AM, now I have to wait until the following 8AM to consider the pot an Ayno Ben Yomo. I think I recall that, when it comes to "shar isurim" there is a machloket between the Shach on one side (who is machmir) and Beit Yosef and Maadanei Melech (who are meikel) on this point. Am I misinformed or misunderstanding the principles here, or does the Rav simply poskin like the Beit Yosef (if I remember correctly) in this matter? Otherwise, it would seem that a treif restaurant's keilim would always have to be considered ben yomo from treif, since even if they were used for it ten days ago, as long as they are continually in use, they would perpetuate their ben yomo status indefinitely. I appreciate your help, sorry for whatever ignorance I'm displaying here. I guess you can't expect much more from someone who isn't always sure what country he's in.
