Welchs grape juice

I would like to clarify some of the facts on Welch’s crushing facilities. I have been to 3 out of the 5 facilities. In the Grandview, Washington facility they have installed an extra heater exchange to cook up the grapes to 180F (which is considered Mevushal according to Reb. Moshe) and then chill it down to 140F. The reason why they have to chill it down to 140F is because the enzymes that they use to break down the pectin will not work above 140F. It cost the company $50,000.00 to install a bigger heater exchange, a booster pump, & probably a mile of tube in shell stainless steel pipes. As far as I know it was only used for the kosher run. The other 2 facilities – one in North East, Pa. And the other one in Westfield, N.Y. does not have this system & they cook up the pulp at 120F to 140F. Each of these facilities crushes about 5,000,000 gallons a year. I understand that your father’s opinion is that Yad Soledes 120F is considered Mevushal (& that is the opinion of Rabbi Ralbag (Tiangle K) so the other 2 facilities would not be a problem. Reb Moshe states in the Igros 165F or 175F. The problem is that these same crushing facilities crush white grape juice. When they crush the white grape they do not cook the grapes (it’s called cold press) and you would have to kosherize the plant before you crush the dark grapes. The main problem would be using the non-kosher storage tanks. Look up Michaber Yoreh Deah 135-7 & Shach 22. You’re 100% correct about the fact that goyim don’t touch the actual juice. All the Welch’s facilities are immaculate & you probably eat off the floor. The problem is that you have goyim opening & shutting pumps & valves, which is a problem of kocho. (See Yoreh Deah 125-1 & 124-14/24) I am surprised that your father (who I believe is one of the biggest Sephardic Rabbi in today’s age) would be so lenient in Stam Yenom, since the Mechaber is so stringent & it’s only the Rama who is lenient. There is one more point that might be relevant, in the 3 facilities that I have been, there is a screen at the bottom of the hopper, which creates a hamshocha before they cook up the grapes. I just wanted to clarify these facts because of what the Chochmas Adam writes in 75-1 Please let me know if any of these facts changed in the last 2 years. Thank You

Also look at the Shach in Siman 124 # 12 and in #66 what he says in the name of the Re'em. Also look at the Teshuvos Mayim Rabim Yore Deah Siman 128. I think you will see why my father holds this way. CYA
