White Truffle Oil
Question
We so looked forward to having dinner with you last Saturday night along with Abie and Rachel Abittan. We look forward to the make up date in a couple of weeks. My wife had a question. She bought Olive Oil with no hechsher called White Truffle Oil. Ingredients are Olive Oil and White Truffle Aroma. I guess it's fine, but have no idea what White Truffle Aroma means. She says it smells like Truffles. What do you think? Regards, David Bibi

Answered by Aaron Abadihttp://www.italmangia.com/about_white_truffles.html The white truffle, tuber magnatum pico by its Latin species name, grows spontaneously in the rich clay soil in the hilly region of the Monferrato in Northern Italy. The tartufo bianco (white truffle) is the most prestigious of the underground mushrooms and is referred to as "the white diamonds of the Piedmont." It is the creme de la creme of the underground tubers, more delicate and prized than the black truffle. Because of its ogranic composition, superior aroma, and scarcity, it is also the most expensive, selling at approximately $1300 a pound in the Northern Italian markets. Shaved paper thin over warm dishes, the aroma of the white truffle intensifies and all gastronomic hyperbole begins.... Thank God for the internet...... Look forward to meeting you. Aaron
