Coffee on Shabbat

Question

Someone told me that non-instant coffees, like Turkish coffee, were not permissible to be made on Shabbat, because although the beans are roasted and ground, they are not "cooked" like instant or freeze-dried coffee, and there is a machloket deoraita regarding "bishul acharey afiya," (which would mean we would pasken l'chumra). What do you think? In addition: He (a very competent Rav) said that the using a tea bag, even in a kli shlishi (as most of the olam does) is also not permitted for the same reason. I said that it seems to me that the preparation of tea leaves in a tea bag is a similar process to roasted non-instant coffee, so if one were allowed (even in a kli sheni) the other would be too. He said I had a good point, but "tea essence" is really the way to go. True? ds
