kosher cheese

Question

how can kosher cheese be kosher? it used to be made by putting mild in a kosher cows stomach, now its made by putting a stomach enzyme in the milk (and a chemist tells me it is more than shishim)

Now it's usually made with a synthetic RENET. That is the simplest & most common. AA
