vegan restaurants

On the subject of vegan chinese restaurants, I understand from reading your other responses that bishul akum is an issue, although foods that are typically eaten raw can be eaten. Questions: 1) these restaurants have all sorts of meat substitutes made from soy and wheat - tofu, seitan, tempeh, gluten etc. are these products subject to bishul akum prohibitions or are they considered foods that can be eaten raw? 2) Is it correct that pasta and rice cannot be eaten at such restaurants? 3) Can foods consisting mainly of cooked vegetables (steamed, fried) be consumed (breaded, fried foods), etc. Thank you

All the above have problems of "Bishul Akum" (cooking of a non-Jew). AA
